Healthy Holiday Side - Roasted Balsamic Brussels Sprouts with Cranberries and Almonds - Recipe

Eating healthy around the holidays can be a challenge. This dish, however, is both healthy, easy, and sure to please at your next holiday party or even just a dinner at home!

I made this dish earlier in the week, and it just hit the spot. Brussels sprouts are one of my all-time favorite vegetables, and when combined with the tartness of fresh cranberries and the sweet toasted almonds, this dish has all the right flavors and textures going on at once, and it's so easy to prepare!

Roasted Balsamic Brussels Sprouts with Cranberries and Almonds

Ingredients:

  • Brussels sprouts
  • Fresh cranberries
  • Slivered almonds (or pecans would be great!)
  • Extra virgin olive oil
  • Balsamic Glaze
  • Salt and Pepper

Procedure:

Wash your brussels sprouts and cut off the ends. Cut in half and place on a large baking sheet. Add the fresh cranberries and drizzle with olive oil, salt, pepper, and balsamic glaze. Sprinkle the almonds or pecans over top, and broil for about 10 to 15 minutes or until completely cooked. Brussels sprouts will appear vibrant in color, and the cranberries will have burst.

It's as simple as that! Try adding some bleu cheese for an awesome twist! This recipe is incredibly healthy, so yummy, and the cranberries and nuts make it incredibly seasonal. Taste the holidays the healthy way, and enjoy!
