Tuna Croquettes with Citrus Aioli - Recipe


This may be the ultimate money saving meal. I made this a few nights ago for my roommate and I before we went to the movies--we wanted a light meal so we could binge on movie theater snacks (oops) and these tuna croquettes were delicious, satisfying, and the best part? They're incredibly inexpensive to make, which is important for anyone trying to live on a tight budget.


We just had the tuna cakes with a dollop of citrus aioli on top, but these would be great over a bed of lettuce, quinoa, or they would be excellent on a bun with a juicy tomato.

Tuna Croquettes with Citrus Aioli

Time: 30 minutes (15 minutes hands-on)
Yield: 4 large cakes

Ingredients:


Tuna Croquettes:
1 5oz. can chunk light tuna (drained)
1 3 oz. can Albacore tuna (drained)
1 egg
1/2 white or yellow onion, diced
1/4 c. bell pepper, chopped into 1/4 inch pieces
1/2 tbs lime juice
1 tbs Dijon Mustard
1/2 tbs low sodium soy sauce
1/2 cup Panko (Japanese) Breadcrumbs
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 tsp. chili powder
2 tbs. olive oil

Citrus Aioli:
1 tbs. plain greek yogurt
1 tbs. mayonaise
1 tbs. lime juice
1/8 tsp. ground cumin
salt and pepper to taste

Instructions:

Combine tuna, mustard, lime juice, soy sauce, onion, and pepper in large mixing bowl.

Add salt, pepper, chili powder and egg. Mix thoroughly.

Add Panko breadcrumbs and stir to combine. (if mixture still seems too wet and falls apart too easily, add more breadcrumbs)

Form hockey-puck sized patties (this recipe should yield 4 that size, or make minis for an appetizer) and place in the refrigerator for 15-20 minutes, allowing the patties to firm up before frying them.

In the meantime, combine all of the ingredients for the citrus aioli. Place in the refrigerator until ready to serve.

After the patties have been refrigerated for 15-20 minutes, in a large frying pan add 2 tbs. of olive oil on med/high heat. Fry the patties for 3 minutes on each side. Serve with a dollop of citrus aioli or try one of the other serving suggestions above.

Want more crunch? roll the patties in Panko breadcrumbs before frying for an extra crisp!
